Truffle Fries (Serves 2 – 3)

We’ve been asked numerous times how to make truffle fries at home so here’s a recipe for you to try this weekend!

Prep Time: 60 mins

Cook Time: 15 mins

Ingredients:
4 large russet potatoes, washed and peeled
a large bowl of iced water
vegetable oil for frying
2 tsp Craft Truffles’ Black (or White) truffle olive oil
Craft Truffles’ Black truffle sea salt, according to taste
100g Parmesan or Pecorino, freshly grated
10g minced parsley for garnish (optional)

Truffle Fries (Serves 2 - 3)

Instructions

1. Slice potatoes into 1/4 – 3/8 inch strips. Place cut potatoes directly into iced water and soak the potatoes for at least an hour to remove excess starch.

2. Drain iced water and pat dry the potato strips with a kitchen towel.

3. Heat up the vegetable oil in a deep-fryer to 160°C and blanch the potatoes for 2 minutes by frying them in batches.

4. Remove potatoes from oil and place them in a sheet tray until ready for second frying step.

5. Heat up the vegetable oil to 180°C and cook potatoes for the second time, approx. 1.5 mins or until crisp.

6. Place fries in a large mixing bowl, toss with truffle olive oil, truffle sea salt and grated parmesan.

7. Serve immediately with Craft Truffles' Truffle Mayonnaise.
