This Hawaiian delicacy of salmon marinated with spicy truffle mayo, served on rice (or soba) with a variety of greens is inspired by a friend, who like us, enjoys a simple and quick meal.

Ingredients:
Spicy salmon Poke
200g of sashimi grade salmon, diced
4 tbspn of Craft Truffles’ spicy truffle mayonnaise
1 tspn of sesame oil
Seasoned rice
2 cups of short grain rice, cooked
1 tbspn of rice vinegar
1/4 tspn salt
Poke Bowl
1 Japanese cucumber, diced
1 avocado, sliced
1/4 cup edamame, peeled
2 mini red radish, thinly sliced
2 tspn of black (or white) sesame seeds
Spicy truffled salmon poke bowl (Serves 2)
Instructions
1. Add spicy truffle mayonnaise to the the diced salmon, mix well and let it chill in the fridge until ready to assemble.
2. To the cooked rice, add rice vinegar and salt. Stir until well combined.
3. To assemble the poke bowl, add desired amount of rice to a bowl.
4. Add all the other poke ingredients in sections, next to each other.
5. Add the spicy truffled salmon poke in the middle of the bowl.
6. Garnish with black (or white) sesame seeds and enjoy!
Tip: If you prefer a low-carb option, swap the rice for quinoa or salad.
