
You might be surprised by the addition of mayonnaise in this recipe, but the creamy goodness of our mayonnaise actually helps separate the rice grains to create a wonderful fluffy texture when the fried rice is cooked, and the hint of truffle afterwards makes the dish super more-ish. Comfort food at its best!
For a more robust taste of truffle, finish with a splash of truffle oil before serving.

Ingredients:
2 cups of Japanese short grain rice
45g Craft Truffles’ Truffle infused mayonnaise
30g unsalted butter
2 garlic cloves, finely chopped
15g light soy sauce
2 eggs, lightly whisked
2 springs of finely chopped spring onion
Salt and Pepper to taste
RECIPE: Japanese Truffle Egg Fried Rice
Instructions:
- In a small bowl, mix truffle mayonnaise well with the cooked rice.
- Heat butter in a pan over medium-high heat. When the butter is melted, add garlic and stir-fry until the garlic is fragrant.
- Add rice and stir-fry, making sure to constantly move the rice around the pan.
- Add soy sauce to the rice, stir until well-combined.
- Move the rice to one side of the pan. Add the beaten eggs into the empty side.
- Allow the eggs to set before scrambling and mixing it into the rice.
- Season with salt and pepper.
- Toss the spring onion through and serve.
