Japanese Truffle Egg Fried Rice (serves 2)

You might be surprised by the addition of mayonnaise in this recipe, but the creamy goodness of our mayonnaise actually helps separate the rice grains to create a wonderful fluffy texture when the fried rice is cooked, and the hint of truffle afterwards makes the dish super more-ish. Comfort food at its best! 

For a more robust taste of truffle, finish with a splash of truffle oil before serving.

2 cups of Japanese short grain rice
45g Craft Truffles’ Truffle infused mayonnaise
30g unsalted butter
2 garlic cloves, finely chopped
15g light soy sauce
2 eggs, lightly whisked
2 springs of finely chopped spring onion
Salt and Pepper to taste

RECIPE: Japanese Truffle Egg Fried Rice


  1. In a small bowl, mix truffle mayonnaise well with the cooked rice.
  2. Heat butter in a pan over medium-high heat. When the butter is melted, add garlic and stir-fry until the garlic is fragrant.
  3. Add rice and stir-fry, making sure to constantly move the rice around the pan.
  4. Add soy sauce to the rice, stir until well-combined.
  5. Move the rice to one side of the pan. Add the beaten eggs into the empty side.
  6. Allow the eggs to set before scrambling and mixing it into the rice.
  7. Season with salt and pepper.
  8. Toss the spring onion through and serve.
