Grilled Cheese with Mushrooms (serves 2)

Everyone loves a good grilled cheese sandwich – the melty pull of the cheese coupled with the crisp buttery goodness of toasted bread is irresistible. Try our mushroom-truffle-mayonnaise hack and take your sandwich to a whole new level.

200g brown swiss mushroom, stalks removed, cut into quarters

2 tablespoons extra-virgin olive oil
salt and pepper
50g cheddar
5og gouda (or any other cheese that you like)
2 tablespoons Craft Truffles’ Cheese Truffle Mayonnaise

4 slices sourdough bread

RECIPE: Grilled Cheese with Mushrooms


  1. Cook the mushrooms: heat a large skillet over medium heat. Add olive oil; when the oil is hot, add the mushrooms and sauté, stirring occasionally.
  2. Season the mushrooms with salt to release moisture. Increase the heat to high and continue to sauté until the mushrooms are golden brown. Season with pepper, then transfer the mushrooms to a small bowl and set aside.
  3. Heat a large pan over medium-low heat.
  4. Spread both sides of the sourdough bread slices with cheese truffle mayonnaise.
  5. Place one slice of bread on the pan. Layer with cheese, the mushrooms, and then more cheese. (This ensures that the melty cheese will hold the sandwich together.) Add salt and pepper to taste.
  6. Top with the other slice of bread and press lightly together.
  7. Cook for about 2 minutes, until lightly browned.
  8. Gently flip the sandwich and cook for an additional 2-3 minutes, or until the cheese is melted and the sandwich is browned to your liking.
