Crostini with truffled mushroom (Serves 4 – 6)

This recipe is perfect if you’re hosting a party and looking for simple canape ideas.

Ingredients:

250g of mixed mushrooms (shitake, swiss brown or white button mushrooms)
2 tbspn of extra virgin olive oil
1 tbspn of butter
a sprig of fresh thyme leaves
1 garlic clove, finely minced
1 tbspn freshly grated lemon zest
a pinch of Craft Truffles’ black truffle sea salt
2 tbspn of Craft Truffles’ white truffle olive oil
1 baguette, cut into 3/4-inch slices
250g mascarpone cheese or cream cheese
fresh chives, roughly chopped (optional)

Crostini with truffled mushroom (Serves 4 - 6)

Instructions

1. To prepare the mushrooms, brush the caps of each mushroom and discard any hard stems. Cut the clean mushrooms into 1/4-inch slices.

2. In a large skillet, heat the olive oil over medium heat. Add mushrooms and cook them until browned on one side, approx. 3 to 5 minutes. Stir then cook another 3 to 5 minutes or until mostly golden brown on all sides.

3. Stir in butter, thyme and garlic. Cook until the garlic is fragrant and the butter absorbs into mushrooms, about 2 minutes. Take the skillet off of the heat and stir in white truffle oil.

4. To prepare the crostini, brush a small amount of olive oil on the sliced baguette and bake in 180C oven for approximately 5 mins.

5. Spread a generous amount of mascarpone cheese or cream cheese on the toasted bread slices and top with mushrooms.

6. Lightly season with black truffle sea salt and garnish with chopped chives. Serve warm.
