Deep Fried Calamari with Spicy Truffle Mayo (serves 2 – 3)

Prep Time: 15 mins

Cook Time: 30 mins

For the fried calamari:

500g squid, cleaned & sliced into strips
80g plain flour
80g corn starch
1 tsp sea salt
1 tsp black pepper, course ground
1 tsp 5-spice powder
1 tbsp dried chilli flakes
Canola oil for frying
Red chilli, diced
Spring onion, finely chopped


1. Combine all dry ingredients in a bowl and mix thoroughly.

2. Toss the squid in the flour mixture, ensuring every piece is well coated.

3. Shake off any excess flour and deep fry the squid in small batches for about 1-2 minutes per batch, till the squid is golden brown and crispy.

4. Sprinkle sliced chilli and spring onion over the fried squid. If you like, you can also sprinkle extra salt, pepper and 5-spice powder for more intense flavour.

5. Serve with Craft Truffles’ Spicy Truffle mayonnaise.
