Crispy baked potatoes with truffle & parmesan (Serves 4)

Whether you’re a seasoned chef or a cooking novice, this recipe is a cinch to prepare.

Ingredients:
500g mixed baby potatoes
1/2 cup parmesan cheese, grated
4 tbspn of extra virgin olive oil
2 tspn Craft Truffles’ white truffle olive oil
salt & cracked black pepper to taste
chopped parsley for garnish (optional)

Crispy baked potatoes with truffle & parmesan (Serves 4 pax)

Instructions

1. To prepare the potatoes, scrub them clean and rinse them under running water.

2. Separately, prepare a large pot of boiling water and add a teaspoon of salt.

3. Cook the potatoes until they are very easily pierced through by a fork (approx. 20 - 25 mins)

4. While the potatoes cook, preheat the oven to 180 degrees celcius and drizzle 1 tablespoon of the olive oil over a large, rimmed baking sheet. Brush the oil so it’s evenly distributed over the sheet.

5. When the potatoes are cooked, drain them in a large colander and let them cool for about 5 minutes before transferring them onto the baking sheet.

6. Evenly distribute the potatoes over the prepared baking sheet, and use a base of a cup or a serving fork to gently smash each potato.

7. Drizzle the remaining 3 tablespoons of olive oil over the smashed potatoes. Sprinkle cracked black pepper and grated parmesan over the potatoes.

8. Bake until the potatoes are nice and golden on the edges (approx. 30 minutes). Drizzle white truffle olive oil and sprinkle them with chopped fresh parsley. Serve hot.
