Crispy Baked potatoes with Truffle and Parmesan (serves 3 – 4)

This recipe takes traditional baked potatoes to a whole other level of deliciousness. Baby potatoes are cooked, smashed and baked with white truffle olive oil and freshly grated parmesan cheese. Prepare this dish as part of your festive menu this Christmas and impress your guests with this simple yet outrageously good side dish.

500g baby potatoes or new potatoes

¼ cup olive oil

sea salt

black pepper, to taste

¼ cup parmesan cheese, freshly grated

2 tablespoons Craft Truffles’ white truffle olive oil

2 tablespoons chives, roughly chopped (optional)


1. Bring to a large pot of water to boil, add the salt and cook until potatoes are fork tender, about 12 – 15 minutes. Drain and let the potatoes cool slightly.

2. Preheat the oven to 200℃.

3. Arrange potatoes to a parchment lined sheet tray. Using the back of a spoon or a drinking glass, press down firmly on each potato to smash it.

4. Drizzle with olive oil and season with salt and pepper. Roast until potatoes are golden brown and crispy, about 30-35 minutes.

5. Drizzle with white truffle olive oil and sprinkle with parmesan cheese.

6. Garnish with chopped chives and serve immediately.
