Ingredients:
250g of your preferred pasta (fettuccine, linguine, or tagliatelle works well)
1 tablespoon olive oil
2 tablespoons unsalted butter
200g mixed mushrooms (such as button, cremini, and shiitake), thinly sliced
2 cloves garlic, minced
Salt and freshly ground black pepper, to taste
1 jar of Craft Truffles’ Ready to Eat Black Truffle Alfredo Sauce
60ml pasta cooking water, optional
25g grated Parmesan cheese, plus more for serving
2 tablespoons fresh parsley, chopped
Extra black truffle slices or truffle oil for garnish, optional
Creamy mushroom and truffle pasta (Serves 3 - 4)
Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
2. While the pasta cooks, heat the olive oil and butter in a large skillet over medium heat until the butter is melted. Add the sliced mushrooms and cook, stirring occasionally, until they are golden brown and have released their moisture, about 5-7 minutes.
3. Add the minced garlic to the mushrooms, and season with salt and pepper. Cook for another 1-2 minutes, until the garlic is fragrant.
4. Lower the heat and add the Craft Truffles' Ready to Eat Black Truffle Alfredo Sauce to the skillet with the mushrooms. Stir well to combine. If the sauce is too thick, add a little reserved pasta cooking water to reach your desired consistency.
5. Add the drained pasta to the skillet, tossing gently to ensure the pasta is evenly coated with the mushroom truffle Alfredo sauce. If the mixture seems dry, add a bit more pasta water until it's creamy.
6. Stir in the grated Parmesan cheese and allow it to melt into the sauce. Check for seasoning, adding more salt and pepper if needed.
7. Divide the pasta into bowls. Garnish with fresh herbs, additional Parmesan cheese, and if you like, add a drizzle of black truffle oil for an even more luxurious touch.
