Ingredients:
2 cloves garlic, minced
200gm ee-fu noodles
250gm white button mushrooms, sliced
1 cup chicken (or mushroom) stock
50gm Chinese yellow chives (optional)
3 tbsp. vegetable oil
Craft Truffles’ White truffle olive oil
Braising Liquid:
3 tbsp. light soya sauce
1 tbsp. dark soya sauce
2 tbsp. oyster sauce
1 tbsp. sesame oil
1 tbsp. Hua Tiao wine
1 tsp sugar
white pepper to taste
50 ml of water
Braised Ee-fu noodles with White Truffle Olive Oil (Serves 2)
Instructions
1. Bring a large pot of water to a boil and blanch ee-fu noodles until it softens.
2. Strain the noodles in a colander and set aside.
3. In a wok heated with vegetable oil, add minced garlic and stir fry until fragrant.
4. Add mushroom and stir fry until the mushrooms are tender.
5. Stir in noodles and braising liquid. Leave on low heat until the liquid is absorbed into the noodles.
6. Stir in the Chinese yellow chives and mix well.
7. Drizzle with Craft Truffles' white truffle olive oil before serving.
