Blackened Fish Tacos with Truffle Mayo (Serves 2)

Simple and delicious way to elevate a weeknight dinner. This dish is great for gatherings too.

Ingredients: 

For the blackened barramundi:
• 1 tablespoon paprika
• 1 tablespoon garlic powder
• 1 teaspoon dried oregano
• 1 teaspoon sea salt flakes
• 180g barramundi

For the mango salsa:
• ½ cup diced tomatoes
• ¼ cup chopped cilantro
• ½ cup diced mangoes
• ½ cup diced avocado

For assembling the tacos:
• 6 small corn or flour tortillas
• 1/2 cup shredded cabbage
• 1/2 cup diced tomatoes
• 1/2 cup diced red onion
• 1/4 cup chopped cilantro
• Lime wedges, for serving

Blackened Fish Tacos with Truffle Mayo (Serves 2)

Instructions:

1. In a small bowl, mix together paprika, garlic powder, oregano and salt. Set aside.

2. Pat the fish fillets dry with paper towels. Rub both sides of the fish fillets with a generous coating of the blackened seasoning mixture.

3. Heat a skillet over medium-high heat. Once hot, add the seasoned fish fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and blackened on the outside. Cooking time may vary depending on the thickness of the fillets.

4. Warm the tortillas in a dry skillet until they are soft and pliable.

5. To assemble the tacos, add a generous dollop of truffle mayonnaise, top each taco with mango salsa and add the blackened fish. Serve with lime wedges on the side.

6. Enjoy the fish tacos while they're still warm and fresh!
