Spicy Truffle BBQ Beef Short Ribs (serves 2)

Everyone loves a good barbecue! Dial up the finger-lickin’ factor by marinating succulent beef short ribs in our spicy truffle mayonnaise. For best results, marinate the meat in our spicy truffle mayo a day ahead and refrigerate it in an airtight container. Let it come to room temperature while you heat the pan.

Ingredients:

500g thin cross-cut bone in short ribs
45g Craft Truffles’ Spicy Truffle mayonnaise
5g chilli powder (optional – depends how spicy you like your ribs!)
Salt

RECIPE: Spicy Truffle BBQ Beef Short Ribs

Instructions:

  1. Prepare the marinade: mix the spicy truffle mayonnaise with chilli powder in a small bowl.
  2. Place ribs on a rimmed baking sheet. Pat dry with a paper towel and season lightly with salt.
  3. Pour the mayonnaise mixture over ribs; turn to coat all over. Refrigerate, covered, for a minimum 3 hours. Marinate overnight for an extra flavour kick!
  4. Heat a large heavy skillet, preferably cast iron, over medium-high heat. When the pan is hot, add 2 tsp. oil and swirl to coat the base of the pan.
  5. Cook the ribs without turning until the underside is dark brown and charred in spots, about 2 minutes. Turn ribs and cook until the second side is golden brown, 1–2 minutes. Transfer to a plate.
  6. Let the ribs rest for 5 minutes before serving.
